Havarti with a South African touch

The folks at Roth Käse USA in Wisconsin are known as cheesemakers with a respect for the classics -- and a talent for identifying and introducing new flavors.
Their prized Ostenborg harvati is now available in an unexpected permutation, Peppadew Sweet Piquanté Pepper, which blends mellow havarti with sweet, savory peppadew, a South African fruit that is gaining popularity with foodies.
It's a versatile cheese that plays well with other flavors. The cheesemaker suggests adding it to wraps, burgers, panini, pizzas, omelettes, scrambled eggs (best on a toasted croissant).
I enjoyed the cheese in a sandwich, sliced into small slabs and served on sourdough bread with sliced ripe tomatoes.
Recommended accompaniments include brewskis -- pilsners and light lagers -- and white wines. To learn more about peppadew havarti and other premium cheeses, go to www.rothkase.com
